Hi disco_14_99! Thank u 4 your comment! The botton ones are calla made out of fennel and carrot. The green flower is a lotus made out of cucumber. You can find the directions on how to do them here: http://indianblogger.com/cucumber-garnishings-ii/ The ones on the top are spring onion, you can find some how-to here: http://www.essentiallyhealthyfood.com/essentially_healthy_food/2010/07/looking-at-garnishing-techniques-part-i-healthy-recipes-by-food-writer-suzie-banks.html I used only the white part of the scallion. Hope I've been helpful. For more ideas come and see my blog www.amouseonthetable.blogspot.com At the moment is only in Italian (you can use the Google Translator gadget), but I'm translating it into English and soon the English version will be available. Kisses Rosemary

This is beautiful. I cannot figure out though what did you use for some of those flowers? Is that onion with a carrot for the bottom ones? What is that green with I'm guessing a flower in the center? And the ones on top are those leaks?
